Coffee Cake Banana Bread


This vegan Coffee Cake Banana Bread is evvvverything, and you can make it for your family, friends or yourself this weekend! Here's the recipe:
3 medium ripe bananas
2 Tbsp brown sugar
1 1/2 tsp vanilla extract
1/2 tsp ground cinnamon
1/2 cup vegan butter
1 cup sugar
2 flax eggs
2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/4 cup vegan buttermilk

Crumb Topping

1 tsp cinnamon
1 cup flour
1 cup brown sugar
6 Tbsp vegan butter, cold

Directions:
Preheat the oven to 350. Make your flax eggs and buttermilk in two separate bowls and set aside. Grease two 8x4 pans. In a small bowl, mash bananas, brown sugar, vanilla extract, and ground cinnamon. In a large bowl, beat butter and sugar together until light and fluffy. Add in flax eggs and beat until mixed. To the wet ingredients, add flour, baking soda, and salt. Stir until just combined. Add in buttermilk and stir. Pour in mashed banana mixture, and mix until combined. Split batter between both prepared pans, then add crumb topping.

Crumb Topping

Combine cinnamon, flour, and brown sugar. Cut in butter with a fork and mix until the topping looks like coarse crumbs. Sprinkle coating evenly over the batter in both pans.

Bake for about 35-40 minutes or until toothpick comes out clean with just a few crumbs stuck to it.
